In mid-September 2022, the Baco Noir was hand-harvested, destemmed, crushed, and pressed into a single neutral oak barrel. The peaches were picked and gifted at the same vineyard site. These were pressed in a basket press and moved to a stainless fusti. In early October 2022, Derrick and Izabela from (now) Folklor Wine & Cider brought us apples from their Home Farm that have not been sprayed for a decade. These were crushed and pressed into neutral oak. Élevage was nineteen months on the gross lees before racking, blending, and bottling.
At Neu Cellars, everything is spontaneously fermented, meaning only native yeast and native bacteria that exist on the grapes and in the cellar environment produce the wine. There are no additions or subtractions. If there were an ingredient label, it would read: grapes.
