Introducing our versatile traditional method sparkling Riesling, the ultimate companion that effortlessly adapts to any situation, featuring invigorating chalky, zesty lemon, and briny salty notes that ensure a perfect match in every setting. 

In late October 2022, the Riesling was hand-harvested and allowed to sit in bins for 3 days before it was destemmed and pressed into neutral oak where primary fermentation was complete in approximately two weeks. One month later, freshly pressed Riesling was added as liqueur de tirage during bottling. The wine was bottle aged for 18 months on the lees before it was disgorged by hand in May 2024.

At Neu Cellars, everything is spontaneously fermented, meaning only native yeast and native bacteria that exist on the grapes and in the cellar environment produce the wine. There are no additions or subtractions. If there were an ingredient label, it would read: grapes.
